Aceto balsamico tradizionale di Modena

The traditional balsamic vinegar of Modena ripens among the silence of the farmhouse. Through the peculiarity of the decanting technique and many years of mellowing ad ageing. Balsamic vinegar is obtained from cooked grape must which ripens through a slow acetification resulting from the natural fermentation and progressive concentration in small barrels made of different woods, with no addition of aromatic substances.

Dark brown colour, strong and shiny, shows its thickness in a correct, syrupy fluidity. A typical scent, complex and penetrating, of clear, yet pleasant and graceful sharpness. Traditional and incomparable flavour, well balanced sweet and sour, it comes nobly full, savory with velvety shades in perfect match to its own olfactive features.
